- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda

- 1/2 teaspoon salt
- 2 cups rolled oats
- 1 cup semisweet chocolate chips
- 1 cup chopped pecans
- 1/2 cup shredded coconut
Instructions
- Prepare for Baking: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream Butter and Sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add Eggs and Vanilla: Beat in the eggs one at a time, then mix in the vanilla extract.
- Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, and salt.
- Mix Dry with Wet: Gradually blend the dry ingredients into the creamed mixture until just combined.
- Fold in Chunky Ingredients: Stir in the oats, chocolate chips, pecans, and coconut until evenly mixed.
- Form Cookies: Drop the dough by rounded tablespoons onto the prepared baking sheets, spacing them 2 inches apart.
- Bake: Place in the oven and bake for 10-12 minutes, or until the edges are lightly browned.
- Cool: Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
