- 1/2 teaspoon salt
- 1 cup buttermilk
- 2 large eggs
- 1/4 cup honey
- 1/4 cup melted butter, plus extra for brushing
- Cooking spray for greasing
- Honey Butter:
- 1/2 cup butter, softened
- 1/4 cup honey
Instructions
- Preheat and Prepare: Heat your oven to 400°F (200°C). Grease a mini muffin tin with cooking spray.
- Mix Dry Ingredients: In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.
- Combine Wet Ingredients: In another bowl, whisk buttermilk, eggs, honey, and melted butter.
- Make Batter: Add the wet ingredients to the dry, stirring until just moistened.
- Fill Muffin Tin: Spoon the batter into the mini muffin tin, filling each cup three-quarters full.
- Bake: Cook for 10-12 minutes, or until golden brown and a toothpick comes out clean.
- Prepare Honey Butter: While baking, mix softened butter with honey until smooth.
- Finish with Honey Butter: Remove poppers from the oven, brush with melted butter, and top each with a dollop of honey butter.
- Serve Warm: Serve these delightful poppers warm, with extra honey butter on the side for dipping.
