Snickerdoodle Cookie Bars

Embrace the simplicity and deliciousness of home-baked cookie bars.

  • Total Time: 45 minutes
  • Yield: 24 bars 1x

Ingredients

Scale

  • 2 2/3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup butter, softened
  • 1 3/4 cups granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 tablespoons sugar (for topping)
  • 2 teaspoons ground cinnamon (for topping)

Instructions

  1. Preheat and Prepare: Heat your oven to 350°F (175°C). Grease your 9x13 inch baking pan.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.
  3. Cream Butter and Sugar: In a large bowl, cream the softened butter with 1 3/4 cups sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla extract.
  4. Combine with Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just blended.
  5. Spread the Batter: Pour the batter into the prepared pan, spreading it evenly.
  6. Add Cinnamon Sugar: Mix the remaining 2 tablespoons sugar with the cinnamon. Sprinkle this mixture evenly over the top of the batter.
  7. Bake: Place in the oven and bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  8. Cool and Serve: Allow the bars to cool completely in the pan before cutting into squares and serving.
