- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 slices bacon, chopped
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 4 cups fresh spinach
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
Instructions
- Season and Cook Chicken: Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat. Cook chicken 5-7 minutes on each side until golden and cooked through. Set aside.
- Render Bacon: In the same skillet, cook bacon until crispy. Remove and set aside, keeping the fat in the skillet.
- Sauté Mushrooms and Garlic: Add mushrooms to the skillet; sauté until golden. Add garlic; cook for one minute.
- Wilt Spinach and Add Cream: Add spinach; cook until wilted. Lower heat, add cream and Parmesan. Cook until the sauce thickens slightly.
- Combine Ingredients: Return bacon to the skillet. Add chicken back to the pan, spooning the sauce and vegetables over the top.
- Simmer to Combine Flavors: Cook for 2-3 more minutes to warm the chicken and meld flavors together.
