  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 slices bacon, chopped
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 4 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Season and Cook Chicken: Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat. Cook chicken 5-7 minutes on each side until golden and cooked through. Set aside.
  2. Render Bacon: In the same skillet, cook bacon until crispy. Remove and set aside, keeping the fat in the skillet.
  3. Sauté Mushrooms and Garlic: Add mushrooms to the skillet; sauté until golden. Add garlic; cook for one minute.
  4. Wilt Spinach and Add Cream: Add spinach; cook until wilted. Lower heat, add cream and Parmesan. Cook until the sauce thickens slightly.
  5. Combine Ingredients: Return bacon to the skillet. Add chicken back to the pan, spooning the sauce and vegetables over the top.
  6. Simmer to Combine Flavors: Cook for 2-3 more minutes to warm the chicken and meld flavors together.
