- 1 pound large shrimp, peeled and deveined
- 1/2 pound smoked sausage, sliced
- 2 ears of corn, each cut into 4 pieces
- 1 pound baby red potatoes, halved or quartered
- 2 tablespoons olive oil
- 2 teaspoons Cajun or Creole seasoning
- 2 cloves garlic, minced
- Salt and pepper to taste
- Lemon wedges and fresh parsley for garnish
Instructions
- Preheat: Set your grill to medium-high heat or preheat your oven to 425°F (220°C).
- Mix Ingredients: In a large bowl, combine the shrimp, sausage, corn, and potatoes. Drizzle with olive oil and add Cajun seasoning, garlic, salt, and pepper. Toss well to coat.
- Prepare Packets: Divide the mixture among four large sheets of foil. Fold and seal the edges to form packets.
- Cook: Place on the grill or in the oven. Grill for 10-12 minutes or bake for 20-25 minutes, until the shrimp are pink and potatoes are tender.
- Serve: Open the packets carefully, garnish with lemon and parsley, and serve hot.
