- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 cup fresh spinach, chopped
- 1/2 cup roasted red peppers, sliced
- 1/2 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon Italian seasoning
Instructions
- Prepare the Oven and Chicken: Preheat your oven to 375°F (190°C). Make a pocket in each chicken breast by slicing along one side. Season inside and out with salt and pepper.
- Stuff the Chicken: Fill each pocket with spinach, roasted red peppers, and mozzarella cheese. Secure with toothpicks if needed.
- Mix Seasoning: In a bowl, combine minced garlic, olive oil, and Italian seasoning.
- Sear the Chicken: Heat a skillet over medium heat. Sear the stuffed chicken breasts until golden, about 3-4 minutes per side.
- Bake: Transfer the chicken to a baking dish. Brush with the garlic oil mixture. Bake for 20-25 minutes, until the chicken is thoroughly cooked.
- Serve: Let the chicken rest for a few minutes before serving. Garnish with additional spinach or herbs if desired.
