- 2 cups crushed chocolate chip cookies
- 1/2 cup unsalted butter, melted
- 2 packages (8 ounces each) cream cheese, softened
- 1/3 cup granulated sugar
- 1 cup edible cookie dough (store-bought or homemade without eggs)
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- Mini chocolate chips for garnish
Instructions
- Prepare the Crust: Mix crushed cookies and melted butter. Press into the bottom of your springform pan. Chill in the fridge.
- Cream Cheese Mixture: In a large bowl, beat cream cheese and sugar until creamy. Add vanilla and mix well.
- Add Cookie Dough: Fold chunks of cookie dough into the cream cheese mixture evenly.
- Whip and Fold: Whip the heavy cream to stiff peaks. Fold gently into the cream cheese mixture.
- Assemble: Pour the filling over the crust. Smooth the top and sprinkle with mini chocolate chips.
- Chill and Set: Refrigerate for at least 6 hours, ideally overnight.
- Serve: Once set, remove from the pan, slice, and serve chilled.
