  • 1 zucchini, sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley, chopped (for garnish)

Instructions

 

  1. Brown the Beef: Heat olive oil in a skillet over medium-high. Add ground beef, season with salt and pepper, and cook until browned. Remove and set aside.
  2. Sauté Vegetables: In the same skillet, add bell peppers, onion, and zucchini. Cook until they begin to soften, about 5-7 minutes.
  3. Add Aromatics: Introduce garlic, oregano, and basil. Cook for an additional minute until fragrant.
  4. Combine and Cook: Return the beef to the skillet. Add olives and stir to mix. Cook until everything is thoroughly heated.
  5. Garnish and Serve: Off heat, sprinkle with feta cheese and parsley. Serve immediately, perhaps over rice or with a side of crusty bread.
