- 1 pound ground beef
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 zucchini, sliced
- 1/2 cup Kalamata olives, pitted and halved
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- 1/2 cup feta cheese, crumbled
- Fresh parsley, chopped (for garnish)
Instructions
- Brown the Beef: Heat olive oil in a skillet over medium-high. Add ground beef, season with salt and pepper, and cook until browned. Remove and set aside.
- Sauté Vegetables: In the same skillet, add bell peppers, onion, and zucchini. Cook until they begin to soften, about 5-7 minutes.
- Add Aromatics: Introduce garlic, oregano, and basil. Cook for an additional minute until fragrant.
- Combine and Cook: Return the beef to the skillet. Add olives and stir to mix. Cook until everything is thoroughly heated.
- Garnish and Serve: Off heat, sprinkle with feta cheese and parsley. Serve immediately, perhaps over rice or with a side of crusty bread.
