This appetizer is a fantastic way to kick off any meal or party with style and flavor.

  • Total Time: 29 minute
  • Yield: 8 1x

Ingredients

Scale

  • 1 block (8 oz) sharp cheddar cheese, cut into cubes
  • 1 block (8 oz) Monterey Jack cheese, cut into cubes
  • 1/2 cup olive oil
  • 1/4 cup white wine vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon sugar
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup chopped fresh parsley
  • 1 cup sliced salami
  • 1 cup pickles, sliced

Instructions

  1. Prepare the Marinade: In a large bowl, whisk together olive oil, white wine vinegar, minced garlic, sugar, basil, oregano, and red pepper flakes.
  2. Marinate the Cheese: Add the cheese cubes to the marinade. Stir gently to ensure each piece is well coated. Cover and refrigerate for at least 4 hours, or overnight, stirring occasionally.
  3. Arrange the Platter: Let the marinated cheese come to room temperature. On a serving platter, arrange the cheese with the slices of salami and pickles.
  4. Garnish and Serve: Sprinkle chopped parsley over the platter for a fresh touch. Serve with crackers or a sliced baguette.
