- 1 block (8 oz) sharp cheddar cheese, cut into cubes
- 1 block (8 oz) Monterey Jack cheese, cut into cubes
- 1/2 cup olive oil
- 1/4 cup white wine vinegar
- 3 cloves garlic, minced
- 1 tablespoon sugar
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- 1/2 cup chopped fresh parsley
- 1 cup sliced salami
- 1 cup pickles, sliced
Instructions
- Prepare the Marinade: In a large bowl, whisk together olive oil, white wine vinegar, minced garlic, sugar, basil, oregano, and red pepper flakes.
- Marinate the Cheese: Add the cheese cubes to the marinade. Stir gently to ensure each piece is well coated. Cover and refrigerate for at least 4 hours, or overnight, stirring occasionally.
- Arrange the Platter: Let the marinated cheese come to room temperature. On a serving platter, arrange the cheese with the slices of salami and pickles.
- Garnish and Serve: Sprinkle chopped parsley over the platter for a fresh touch. Serve with crackers or a sliced baguette.
