Instructions
- Mix the Batter: In a large bowl, combine flour, cornstarch, baking powder, salt, and sugar. Whisk in cold water until the batter is smooth.
- Prepare the Protein: Season the fish or chicken strips with salt and pepper. Lightly dredge in flour, then dip into the batter to coat thoroughly.
- Heat the Oil: In a deep fryer or large pot, heat the oil to 375°F (190°C). This is crucial for that signature crunch.
