Meatloaf:

  • 1 1/2 pounds ground beef
  • 1/2 cup breadcrumbs
  • 1 onion, finely chopped
  • 1 egg
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper to taste

Potato Layer:

  • 4 large potatoes, peeled and diced
  • 1/2 cup milk
  • 2 tablespoons butter
  • 1/2 cup sour cream
  • 1 cup cheddar cheese, shredded
  • 6 slices bacon, cooked and crumbled
  • 1/4 cup green onions, chopped

Instructions

  1. Preheat and Prepare: Set your oven to 375°F (190°C). Grease your baking dish.
  2. Make the Meatloaf: In a large bowl, mix ground beef, breadcrumbs, onion, egg, ketchup, Worcestershire sauce, salt, and pepper. Press this mixture into the bottom of your prepared dish.
  3. First Bake: Place the meatloaf in the oven and bake for 25 minutes.
  4. Prepare Potatoes: While the meatloaf bakes, boil the diced potatoes until tender, about 15-20 minutes. Drain well, then mash with milk, butter, and sour cream until smooth.
  5. Assemble the Casserole: Spread the mashed potatoes over the partially cooked meatloaf. Sprinkle with shredded cheddar cheese, crumbled bacon, and chopped green onions.
  6. Final Bake: Return the casserole to the oven and bake for an additional 20 minutes, or until the cheese is melted and lightly browned.
  7. Serve and Enjoy: Let the casserole cool slightly before serving. Garnish with extra green onions if desired.
