Meatloaf:
- 1 1/2 pounds ground beef
- 1/2 cup breadcrumbs
- 1 onion, finely chopped
- 1 egg
- 1/4 cup ketchup
- 2 tablespoons Worcestershire sauce
- Salt and pepper to taste
Potato Layer:
- 4 large potatoes, peeled and diced
- 1/2 cup milk
- 2 tablespoons butter
- 1/2 cup sour cream
- 1 cup cheddar cheese, shredded
- 6 slices bacon, cooked and crumbled
- 1/4 cup green onions, chopped
Instructions
- Preheat and Prepare: Set your oven to 375°F (190°C). Grease your baking dish.
- Make the Meatloaf: In a large bowl, mix ground beef, breadcrumbs, onion, egg, ketchup, Worcestershire sauce, salt, and pepper. Press this mixture into the bottom of your prepared dish.
- First Bake: Place the meatloaf in the oven and bake for 25 minutes.
- Prepare Potatoes: While the meatloaf bakes, boil the diced potatoes until tender, about 15-20 minutes. Drain well, then mash with milk, butter, and sour cream until smooth.
- Assemble the Casserole: Spread the mashed potatoes over the partially cooked meatloaf. Sprinkle with shredded cheddar cheese, crumbled bacon, and chopped green onions.
- Final Bake: Return the casserole to the oven and bake for an additional 20 minutes, or until the cheese is melted and lightly browned.
- Serve and Enjoy: Let the casserole cool slightly before serving. Garnish with extra green onions if desired.
