Instructions
- Prepare the Baking Sheet: Line it with parchment paper.
- Mix Oats and Peanut Butter: In a large bowl, combine the oats and peanut butter. Set aside.
- Cook the Sugar Mixture: In a saucepan, mix the sugar, milk, and butter. Bring to a boil over medium heat, stirring often.
- Boil and Combine: Once boiling, let it boil for 1 minute, then remove from heat. Stir in the lemon juice, lemon zest, and vanilla.
- Combine All Ingredients: Pour the lemon mixture over the oat mixture. Stir until well mixed.
- Form the Cookies: Drop spoonfuls onto the prepared baking sheet.
- Let Set: Allow the cookies to cool and set at room temperature, about 1 hour.
