- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup (2 sticks) unsalted butter, cold and cut into small pieces
- 1/2 cup ice water
Instructions
- Combine Dry Ingredients: In a large bowl, mix the flour and salt. Add the cold butter pieces, tossing them until each is coated with flour.
- Add Water Gradually: Gradually pour in ice water, stirring with a fork until the dough begins to come together. Add just enough water to form a rough ball, but be careful not to over-moisten.
- Initial Rolling and Folding: Turn the dough out onto a floured surface and roll into a rectangle. Fold it in thirds like a letter, then turn 90 degrees and repeat the roll and fold. Wrap and chill the dough for 30 minutes.
- Repeat Folds: After chilling, roll out, fold, and turn the dough two more times, chilling for 30 minutes after each complete set of folds.
- Final Chilling: After the final folds, wrap the dough well and refrigerate for at least an hour before using.
- Prep Time: 20 minutes
- Cook Time: At least 1.5 hours
