- 1 1/2 pounds sirloin steak, cut into 1-inch cubes
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 4 tablespoons butter
- 3 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 pound baby potatoes
- 1 cup cheddar cheese, shredded
- 1/2 cup sour cream
- 2 tablespoons chives, chopped
Instructions
- Boil Potatoes: Start by boiling the baby potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly.
- Smash and Crisp: Using the bottom of a cup, gently smash the potatoes on a baking sheet. Drizzle with olive oil, season with salt and pepper, and broil until crispy, about 5-7 minutes. Then, top with cheddar cheese and return to the broiler until the cheese is melted and bubbly.
- Sear Steak Bites: Heat olive oil in a skillet over medium-high heat. Season the steak bites with salt and pepper. Sear in the hot skillet, stirring until evenly browned and cooked to your desired doneness, about 2-3 minutes for medium.
- Add Flavor: Add butter and garlic to the skillet with the steak and cook for an additional 1-2 minutes, until the garlic is fragrant and the butter is melted. Stir in the parsley.
- Serve: Plate the garlic butter steak bites alongside the cheesy smashed potatoes, topped with a dollop of sour cream and sprinkled with chives.
