Instructions

  1. Boil Potatoes: Start by boiling the baby potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly.
  2. Smash and Crisp: Using the bottom of a cup, gently smash the potatoes on a baking sheet. Drizzle with olive oil, season with salt and pepper, and broil until crispy, about 5-7 minutes. Then, top with cheddar cheese and return to the broiler until the cheese is melted and bubbly.
  3. Sear Steak Bites: Heat olive oil in a skillet over medium-high heat. Season the steak bites with salt and pepper. Sear in the hot skillet, stirring until evenly browned and cooked to your desired doneness, about 2-3 minutes for medium.
  4. Add Flavor: Add butter and garlic to the skillet with the steak and cook for an additional 1-2 minutes, until the garlic is fragrant and the butter is melted. Stir in the parsley.
