- 1 pound ground beef
- 1 packet taco seasoning
- 1 (10 oz) can Ro-Tel diced tomatoes and green chilies
- 1 (16 oz) can refried beans
- 1 cup corn kernels, canned or frozen
- 1/2 cup chopped green bell pepper
- 1 cup Mexican blend cheese, shredded
- 1 cup tortilla chips, crushed
- Sour cream, for serving
- Fresh cilantro, chopped for garnish
Instructions
- Preheat and Prepare: Heat your oven to 350°F (175°C) and grease your baking dish.
- Cook the Beef: In a large skillet, brown the ground beef over medium heat; drain the excess grease.
- Add Flavors: Stir in the taco seasoning, Ro-Tel tomatoes, and green bell pepper to the beef, cooking for about 5 minutes until everything is well combined.
- Layer the Bake: Spread the refried beans into the bottom of the baking dish. Top with the beef mixture, followed by the corn, and sprinkle with shredded cheese.
- Top with Chips: Add a final layer of crushed tortilla chips over the cheese.
- Bake: Place in the oven and bake for 20-25 minutes until the cheese is bubbly and golden.
- Garnish and Serve: Garnish with fresh cilantro and serve hot with sour cream.
