- 4 large potatoes, peeled and grated
- 1 onion, finely grated
- 2 eggs, beaten
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- Oil for frying
Instructions
- Prepare Potatoes: Place the grated potatoes in a clean cloth and squeeze out as much water as possible.
- Make Pancake Batter: In a large bowl, combine the dried potatoes, grated onion, eggs, flour, salt, pepper, and garlic powder. Stir until well blended.
- Heat Oil: Pour enough oil into a large skillet to lightly cover the bottom, and heat over medium-high.
- Form Pancakes: Spoon about 1/4 cup of potato mixture per pancake into the hot oil. Flatten with the back of the spoon to form pancakes.
- Cook Pancakes: Fry each pancake for about 3-4 minutes on each side or until they are golden brown and crispy.
- Drain and Serve: Transfer the pancakes to paper towels to drain. Serve hot, topped with sour cream or applesauce for added flavor.
