Instructions

  1. Prepare Potatoes: Place the grated potatoes in a clean cloth and squeeze out as much water as possible.
  2. Make Pancake Batter: In a large bowl, combine the dried potatoes, grated onion, eggs, flour, salt, pepper, and garlic powder. Stir until well blended.
  3. Heat Oil: Pour enough oil into a large skillet to lightly cover the bottom, and heat over medium-high.
  4. Form Pancakes: Spoon about 1/4 cup of potato mixture per pancake into the hot oil. Flatten with the back of the spoon to form pancakes.
  5. Cook Pancakes: Fry each pancake for about 3-4 minutes on each side or until they are golden brown and crispy.
