  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1/2 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 cup tortilla chips, crushed
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Cook Beef and Onion: In a large skillet, brown the ground beef and onion over medium heat until the beef is fully cooked and the onions are soft. Drain any excess fat.
  2. Mix Ingredients: Stir in taco seasoning, black beans, corn, diced tomatoes with green chilies, and salsa. Cook until everything is well combined and heated through.
  3. Assemble the Casserole: Transfer the mixture to a greased 9x13 inch baking dish, spreading it evenly.
  4. Add Cheese and Chips: Sprinkle shredded cheese over the mixture, then top with crushed tortilla chips.
  5. Bake: Place in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly, and the edges start to brown.
