- 1 pound ground beef
- 1 onion, chopped
- 1 package (1 oz) taco seasoning mix
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies, undrained
- 1/2 cup salsa
- 1 cup shredded cheddar cheese
- 1 cup tortilla chips, crushed
- Fresh cilantro, chopped (for garnish)
Instructions
- Cook Beef and Onion: In a large skillet, brown the ground beef and onion over medium heat until the beef is fully cooked and the onions are soft. Drain any excess fat.
- Mix Ingredients: Stir in taco seasoning, black beans, corn, diced tomatoes with green chilies, and salsa. Cook until everything is well combined and heated through.
- Assemble the Casserole: Transfer the mixture to a greased 9x13 inch baking dish, spreading it evenly.
- Add Cheese and Chips: Sprinkle shredded cheese over the mixture, then top with crushed tortilla chips.
- Bake: Place in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly, and the edges start to brown.
- Garnish and Serve: Sprinkle chopped cilantro over the top before serving. Serve hot, with extra salsa or sour cream if desired.
