- 2 pounds beef stew meat, cut into 1-inch cubes
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1/4 cup all-purpose flour
- 1/2 cup water
- 1/2 cup sour cream
- 12 ounces egg noodles, cooked and drained
Instructions
- Combine Ingredients: In the crockpot, place beef, onion, and garlic.
- Mix Liquids: Whisk together beef broth, Worcestershire sauce, salt, pepper, and thyme in a bowl. Pour over the beef mixture.
- Cook: Cover and set to cook on low for 7-8 hours, or on high for 4-5 hours, until the beef is tender.
- Thicken Sauce: Mix flour with water until smooth; stir into the crockpot. Set to high and cook for another 30 minutes to thicken.
- Add Creaminess: Stir in sour cream just before serving for a rich, creamy texture.
- Serve: Ladle beef tips and gravy over cooked egg noodles.
