Ingredients
Scale
- 1 1/2 pounds ground beef
- 1 packet French onion soup mix
- 1/2 cup breadcrumbs
- 1 large egg
- 1/4 cup milk
- 2 cups beef broth
- 1 cup shredded Swiss cheese
- 1 cup caramelized onions

- Prepare the Meatball Mixture: In a bowl, combine the ground beef, French onion soup mix, breadcrumbs, egg, and milk. Mix until well combined but not overworked. Form the mixture into small, evenly sized meatballs.
- Arrange in Crock Pot: Place the meatballs in a single layer at the bottom of the Crock Pot.
- Add Broth: Pour the beef broth over the meatballs, ensuring they are mostly submerged.
- Cook: Set the Crock Pot to low and cook for 6 hours, or on high for 3 hours, until the meatballs are cooked through.
- Add Cheese and Onions: In the last 30 minutes of cooking, top the meatballs with caramelized onions and sprinkle with shredded Swiss cheese. Cover and continue cooking until the cheese is melted and bubbly.
- Serve and Enjoy: Serve the meatballs hot, with a garnish of fresh parsley and extra caramelized onions if desired, alongside mashed potatoes or noodles.
- Prep Time: 20 minutes
