- 4 boneless, skinless chicken breasts, diced
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 cup heavy cream
- 1 (10 oz) package frozen spinach, thawed and squeezed dry
- 1 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
Instructions
- Preheat and Prepare: Set your oven to 375°F (190°C) and grease your casserole dish.
- Cook Chicken Mixture: In a skillet over medium heat, heat olive oil. Add chicken, onion, and garlic, seasoning with salt, pepper, and Italian seasoning. Cook until the chicken is thoroughly browned and onions are translucent.
- Simmer with Cream: Pour in the heavy cream and bring to a simmer. Fold in the spinach and Parmesan cheese and cook until the mixture thickens slightly.
- Assemble the Casserole: Transfer the creamy chicken and spinach mixture to the prepared casserole dish. Sprinkle the top with mozzarella cheese.
- Bake: Place in the oven and bake for 20-25 minutes, or until the cheese on top is golden and bubbly.
