- 1 1/2 cups crushed chocolate chip cookies
- 1/4 cup unsalted butter, melted
- 3 packages (8 ounces each) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 1 cup mini chocolate chips, plus extra for topping
- Whipped cream, for garnish
Instructions
- Prepare the Oven and Pan: Preheat to 350°F (175°C). Grease your springform pan.
- Create the Crust: Mix crushed cookies and butter. Press firmly into the bottom of the pan.
- Make the Filling: In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla.
- Add Sour Cream and Chips: Fold in sour cream and mini chocolate chips. Pour over the crust.
- Bake: Cook for 45 minutes. Turn off the oven, let the cheesecake sit inside for 1 hour.
- Chill: Refrigerate overnight, or at least 4 hours.
- Garnish and Serve: Top with extra chocolate chips and whipped cream before serving.
