- 2 pounds small red potatoes, quartered
- 1/4 cup olive oil
- Salt and black pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1 cup sour cream
- 1 cup cheddar cheese, shredded
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
- 1/4 cup chopped parsley
Instructions
- Prep the Oven and Baking Sheet: Preheat the oven to 400°F (200°C) and grease a large baking sheet.
- Season and Roast Potatoes: Toss the potatoes with olive oil, salt, pepper, garlic powder, onion powder, and smoked papaprika. Arrange in a single layer on the baking sheet. Roast for 25-30 minutes, until golden and tender.
- Combine with Creamy Ingredients: Transfer the roasted potatoes to a large mixing bowl. Add sour cream, cheddar cheese, bacon, and green onions while the potatoes are still hot. Mix well.
- Bake Again for Melty Goodness: Transfer the potato mixture to a baking dish. Bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
- Garnish and Serve: Sprinkle with chopped parsley before serving.
