- 2 cups leftover mashed potatoes
- 1 cup shredded sharp cheddar cheese
- 2 tablespoons grated Parmesan cheese
- 2 large eggs, beaten
- 1/4 cup chopped chives or green onions
- Salt and pepper to taste
- Cooking spray for greasing
Instructions
- Preheat Oven: Set your oven to 400°F (200°C). Grease a mini muffin tin with cooking spray.
- Mix Ingredients: In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, eggs, and chives. Season with salt and pepper.
- Fill Muffin Tin: Spoon the mixture into the greased mini muffin tin, filling each cup to the top.
- Bake: Place in the oven and bake for 15-20 minutes until the edges are golden and tops are crispy.
- Cool and Serve: Allow to cool in the tin for 5 minutes before removing. Serve warm, garnished with extra chives if desired.
