- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup sliced bell peppers (mix of red, yellow, and green)
- 1 medium onion, sliced
- 1 cup shredded cheddar cheese
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Prepare Your Oven and Dish: Preheat your oven to 375°F (190°C) and grease your baking dish lightly.
- Season the Chicken: In a bowl, mix the chicken with olive oil and all the spices until well coated.
- Arrange in Dish: Place the seasoned chicken in the dish and add the sliced peppers and onions around it.
- Bake Covered: Cover with foil and bake for 20 minutes.
- Add Cheese and Finish Baking: Remove the foil, add cheese, and bake for another 10-15 minutes until the cheese is bubbly and golden.
- Garnish and Serve: Sprinkle with cilantro and serve with lime wedges on the side.
