- 1 cup uncooked long-grain rice
- 2 cups water
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1 can (15 oz) tomato sauce
- 1 cup frozen peas and carrots
- 2 cups shredded cheddar cheese
Instructions
- Cook Rice: In a saucepan, bring water to a boil. Add rice, reduce to low, cover, and simmer for 18 minutes. Set aside.
- Brown Beef: In a skillet, heat olive oil over medium-high. Cook ground beef until browned; drain fat.
- Sauté Onion and Garlic: Add onion and garlic to beef; cook until onion is translucent.
- Season and Combine: Stir in salt, pepper, paprika, thyme, and tomato sauce. Add cooked rice and frozen peas and carrots. Mix well.
- Assemble Casserole: Transfer mixture to a baking dish. Top with cheddar cheese.
- Bake: Place in preheated oven at 350°F (175°C). Bake for 20-25 minutes until cheese is bubbly and golden.
- Serve: Garnish with herbs if desired and serve hot.
