  • 2 cups water
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1 can (15 oz) tomato sauce
  • 1 cup frozen peas and carrots
  • 2 cups shredded cheddar cheese

Instructions

  1. Cook Rice: In a saucepan, bring water to a boil. Add rice, reduce to low, cover, and simmer for 18 minutes. Set aside.
  2. Brown Beef: In a skillet, heat olive oil over medium-high. Cook ground beef until browned; drain fat.
  3. Sauté Onion and Garlic: Add onion and garlic to beef; cook until onion is translucent.
  4. Season and Combine: Stir in salt, pepper, paprika, thyme, and tomato sauce. Add cooked rice and frozen peas and carrots. Mix well.
  5. Assemble Casserole: Transfer mixture to a baking dish. Top with cheddar cheese.
  6. Bake: Place in preheated oven at 350°F (175°C). Bake for 20-25 minutes until cheese is bubbly and golden.
  7. Serve: Garnish with herbs if desired and serve hot.
