Prepare Pork Chops: Season the pork chops with salt and pepper on both sides. In a skillet, heat olive oil over medium-high heat. Add the pork chops, searing until golden brown, about 4-5 minutes per side.

Add Flavorings: Reduce the heat to medium. Add butter, minced garlic, thyme, and rosemary. Cook for 1-2 minutes, basting the pork chops continuously with the butter mixture.

Rest the Chops: Remove the pork chops from the skillet and let them rest while you prepare the mashed potatoes.
