- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1 cup fresh blueberries
- Zest of 1 lemon
Instructions
- Preheat and Prepare: Heat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- Mix Dry Ingredients: In a bowl, combine flour, baking powder, salt, and baking soda.
- Cream Butter and Sugar: In a large bowl, beat the sugar and butter until creamy. Add eggs one at a time, thoroughly mixing after each. Mix in vanilla.
- Combine Dry and Wet Mixtures: Alternately add the flour mixture and buttermilk to the creamed butter, starting and ending with the flour.
- Fold in Blueberries and Lemon Zest: Gently fold the blueberries and lemon zest into the batter.
- Bake the Loaf: Pour the batter into the prepared pan and smooth the top. Bake for 50-60 minutes, or until a toothpick comes out clean.
- Cool and Serve: Let the loaf cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
