  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup fresh blueberries
  • Zest of 1 lemon

Instructions

  1. Preheat and Prepare: Heat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. Mix Dry Ingredients: In a bowl, combine flour, baking powder, salt, and baking soda.
  3. Cream Butter and Sugar: In a large bowl, beat the sugar and butter until creamy. Add eggs one at a time, thoroughly mixing after each. Mix in vanilla.
  4. Combine Dry and Wet Mixtures: Alternately add the flour mixture and buttermilk to the creamed butter, starting and ending with the flour.
  5. Fold in Blueberries and Lemon Zest: Gently fold the blueberries and lemon zest into the batter.
  6. Bake the Loaf: Pour the batter into the prepared pan and smooth the top. Bake for 50-60 minutes, or until a toothpick comes out clean.
  7. Cool and Serve: Let the loaf cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
