- 1 pound ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with green chilies
- 2 cups crushed tortilla chips, plus extra for topping
- 2 cups shredded cheddar cheese
- Sour cream, diced tomatoes, and sliced green onions for garnish
Instructions
- Preheat and Prepare: Heat your oven to 350°F (175°C) and grease your baking dish.
- Cook the Beef: In a skillet over medium heat, brown the ground beef. Drain any excess fat.
- Add Flavors: Mix in taco seasoning and water. Simmer until the mixture thickens. Then, stir in black beans, corn, and diced tomatoes with green chilies.
- Layer the Ingredients: In the prepared baking dish, create a base with half of the crushed tortilla chips. Top with half of the beef mixture, then sprinkle with one cup of cheese. Repeat these layers once more.
- Bake to Perfection: Place the casserole in the oven and bake for 20-25 minutes until the cheese is bubbly and golden.
- Garnish and Serve: Finish with dollops of sour cream, fresh diced tomatoes, and green onions. Serve hot and enjoy the burst of flavors!
