For the crust:
- 1 ½ cups graham cracker crumbs
- 1/3 cup sugar
- 6 tablespoons unsalted butter, melted
For the filling:
- 1 pound fresh strawberries, hulled and halved
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 package (8 oz) cream cheese, softened
- 1/2 cup confectioners' sugar
- 1 cup heavy cream, whipped
Instructions
- Prepare the Crust: In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom and up the sides of a 9-inch pie plate. Refrigerate while making the filling.
- Make Strawberry Sauce: Puree half the strawberries with sugar, vanilla extract, and lemon juice until smooth.
- Prepare the Filling: Beat cream cheese with confectioners' sugar until smooth. Gradually mix in the strawberry sauce. Gently fold in the whipped cream.
- Assemble the Pie: Pour the filling into the chilled crust. Arrange the remaining strawberry halves on top.
- Chill the Pie: Refrigerate for at least 4 hours, or until set.
