- 1 (15.25 oz) package white cake mix
- 1 (20 oz) can crushed pineapple, with juice
- 1 cup coconut milk
- 3 eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup shredded coconut
- 1 cup chopped pecans
- 1 cup coconut flakes, toasted, for topping
Instructions
- Preheat and Prep: Start by preheating your oven to 350°F (175°C). Grease your baking dish.
- Mix the Batter: In a large bowl, combine the cake mix, crushed pineapple with its juice, coconut milk, eggs, vegetable oil, and vanilla extract. Stir until well blended.
- Add Extras: Fold in the shredded coconut and chopped pecans into the batter.
- Bake the Cake: Pour the batter into the prepared baking dish and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and Top: Allow the cake to cool completely in the pan. Once cool, sprinkle the toasted coconut flakes over the top.
