- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 pound ground beef
- 2 teaspoons paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon black pepper
- 1 (15 oz) can diced tomatoes
- 1 (15 oz) can tomato sauce
- 2 cups beef broth
- 1 bay leaf
- 2 cups elbow macaroni, uncooked
- Salt to taste
- Chopped parsley for garnish
Instructions
- Heat Oil and Sauté Onion: In a large pot, heat the olive oil over medium heat. Add the onion and cook until translucent, about 5 minutes.
- Add Garlic and Beef: Introduce the minced garlic, cooking for one minute until fragrant. Add the ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat.
- Incorporate Spices: Stir in paprika, oregano, basil, and black pepper, and cook for another minute.
- Mix Tomatoes and Simmer: Add diced tomatoes, tomato sauce, beef broth, and a bay leaf. Bring to a simmer, then reduce the heat and cover. Simmer for 20 minutes.
- Add Pasta: Stir in the uncooked elbow macaroni. Continue to simmer, covered, for about 15 minutes, or until the pasta is tender.
- Season and Serve: Remove the bay leaf, adjust salt to taste, and garnish with chopped parsley before serving.
