Instructions
- Mix Dry Ingredients: In a large bowl, sift together the flour, baking powder, sugar, and salt.
- Combine Wet Ingredients: In another bowl, whisk the egg, milk, melted butter, and vanilla extract.
- Make the Batter: Pour the wet ingredients into the dry ingredients and stir until just mixed. The batter should be slightly lumpy.
- Preheat the Griddle: Heat a lightly greased griddle or frying pan over medium-high heat.
- Cook the Pancakes: Scoop about 1/4 cup of batter for each pancake onto the griddle. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook until browned on the other side.
