- 1 1/2 cups vegetable oil
- 2 cups granulated sugar
- 3 eggs
- 3 cups all-purpose flour
- 1 teaspoon baking soda

- 1 tablespoon ground cinnamon
- 3 medium apples, peeled, cored, and diced
- 1 cup chopped pecans
- 1 teaspoon vanilla extract
- For the Caramel Glaze:
- 1 cup brown sugar
- 1/2 cup butter
- 1/4 cup milk
Instructions
- Preheat and Prep: Begin by preheating your oven to 350°F (175°C). Grease and flour your baking pan.
- Mix Wet Ingredients: In a large bowl, vigorously beat together the vegetable oil, granulated sugar, and eggs until smooth.
- Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually blend these into the wet mixture, stirring just until combined.
- Add Fruits and Nuts: Fold in the diced apples, chopped pecans, and vanilla extract into the batter.
- Bake the Cake: Pour the batter into the prepared pan and bake for about 45-50 minutes, or until a toothpick inserted in the center comes out clean.
- Prepare the Glaze: While the cake bakes, make the caramel glaze by combining brown sugar, butter, and milk in a saucepan over medium heat. Bring to a boil, stirring constantly, and let boil for 1 minute. Remove from heat.
- Glaze and Cool: Once the cake is done, pour the hot caramel glaze over the warm cake. Allow the cake to cool slightly in the pan.
